This morning we were pleased to visit your homes via a trip to WBRC Fox 6 studios & cooking on Good Day Alabama. Executive Chef Richard Showers was joined in the kitchen by Marketing & Special Events Manager, Leigh Ann Callaway and Good Day Alabama News Anchor Janice Rogers. Richard demonstrated how to prepare the Greek Seafood Nachos. What an amazing dish! The Greek Seafood Nachos are house-fried wonton chips topped with a spinach cheese sauce, sautéed shrimp & crawfish, diced tomatoes, red onions, banana peppers, black olives, green onions, and freshly grated Parmesan cheese. He started out making the spinach cheese sauce, then sautéing the shrimp & crawfish. The dish was completed by topping a plate of wonton chips with the sauce, then the seafood, followed by the remaining toppings. Everyone just loved the dish. Recipe
Chips – Wonton Chips – Fry wonton wrappers cut into triangles for 10 seconds at 350 degrees. Tortilla chips or store bought chips can be substituted. Please use extreme caution if frying at home.
Spinach Cheese Sauce
1 lb Extra-melt Cheese
9 oz Cream Cheese
1 Pint & 1 Cup (40 oz) Heavy Whipping Cream
12 oz Half & Half
1 oz White Wine
1/2 oz Chopped Garlic
1 lb Feta Cheese
4 oz of Freshly Chopped Spinach
In a pot over medium high heat combine the heavy whipping cream and half & half. Remember to stir throughout the process so that you do not scorch the sauce. Once the base is hot slowly combine in your extra melt cheese, then cream cheese making sure that the cheeses are throughly melted. Add in the white wine, chopped garlic, them feta cheese. Once the consistency is what you want it to be (typically smooth and creamy), add in your chopped spinach and stir.
Shrimp & Crawfish
Heat a tablespoon of olive oil in a sauté pan and add shrimp & crawfish and sauté until throughly cooked.
